Why Guinness Tastes Different: Nitrogen, Roasted Barley and the Draught Serve

Part of the Invergordon Guinness guide.

Guinness Draught tastes different because several things work together: roasted barley contributes colour and roast character; the recipe balances bitter and sweet notes; nitrogen creates small bubbles and a creamy texture; and the draught serve builds the compact head.

What flavours are in Guinness Draught?

Guinness’s product description lists roasted coffee and chocolate aromas, with bitter, sweet and roasted flavours in balance. Those are useful directions rather than ingredients added to imitate coffee or chocolate.

What does roasted barley do?

Roasted barley helps produce the beer’s deep colour, dry roast character and familiar coffee-like impression. The beer appears black in ordinary pub light, but Guinness describes it as dark ruby red.

What does nitrogen change?

Nitrogen creates smaller bubbles than a highly carbonated beer, contributing to a smoother texture and dense head. It also drives the visible surge and settle after the first pour. Guinness credits Michael Ash’s work in the 1950s with creating the first nitro beer system.

Why does the head matter?

The head is part of the aroma, texture and visual consistency of the serve. It should be compact and creamy. A large foamy cap or a flat pint points to a different result, even though the underlying recipe has not changed.

Frequently asked questions

Is Guinness flavoured with coffee?

The official ingredient list does not list coffee. Coffee is a tasting note associated with the roasted grain character.

Why is Guinness less fizzy?

Nitrogenation produces a softer, finer-bubbled texture than a strongly carbonated beer.

Is Guinness thick?

It can feel creamy because of the nitrogen and head, but “thick” is a subjective description.

What strength is it?

The Guinness Draught listed on the current Invergordon menu is 4.2% ABV.
